I wanted to make something with lentils I hadn't tried before, so I came across this recipe. I was pleasantly surprised with the outcome. It was a bit watery but it was really tasty. I subbed a teaspoon of dried thyme for one of the teaspoons of salt. I also had some okra so I diced that up and threw it in the soup. I added a teaspoon of cayenne. The okra was a great addition and the soup was a great replacement for my usual lentil soup. Definitely makes a great main meal.
I love this soup, and serve it with brown rice. The lentils, however, have a way of falling apart and turning into a mush when cooked, so I add a little more liquid than others. I also add a big clove of garlic and half an onion - I like the flavor. I don't like black pepper, so I leave it out. I cook the garlic and onion in the soup for a few minutes before adding the lentils, and then simmer until the lentils are tender. I serve it over brown rice.
This soup was so flavorful and so filling. I doubled the recipe and served it with a bit of freshly baked buttermilk scones. It was a great soup for a cold winter's day. It was also a great way to use up the last of the butternut squash. The butternut squash gave the soup a nice creamy texture and added a nice color. Thanks!
I just made this for dinner and it was the first time I've ever tried it...so while I totally enjoyed it, I did have to put it through the food processor. I had everything except the lentils on hand and I decided to try this recipe because I liked the sound of it. My in-laws will love it and so I think I'll be making it a lot. :)
I just had the most delicious soup! I made it without the chicken, since I was using ground chicken, and it was fantastic! It was very creamy and just a great flavor. I was worried that it would be too watery, but it was not. I also used 1/2 cup of lentils and 1/2 cup of split peas. It was a great combination of flavors. I will definitely make this soup again and again!
I made this soup over the weekend for dinner, and it was a great success! I used red lentils, added curry, and added mango, since I had some in the fridge from another dish I'd made. I also added a little greek yogurt, as I liked the flavor that it added. It was wonderful, and I would definitely make it again!
